Beginning this week, chicken prepared with locally-produced Grampy D's Original Recipe Northern Fried Chicken coating will be served in a sit-down dining experience at Bucci’s Place Eatery located at Royal Canadian Legion Branch 25.
Prior to Grampy D’s partnership with Bucci’s, the chicken coating mix was available solely through packages for sale at several local grocery stores.
Grampy D's Original Recipe Northern Fried Chicken coating is the creation of Sault entrepreneur David Poluck.
“It came from a combination of techniques my dad showed me, the way my grandmother cooked and things I’ve done. I’ve cooked a lot of different foods,” Poluck told SooToday.
Poluck’s recipe contains all natural ingredients with no chemical substitutes and includes flour, eggs and dairy with carefully selected herbs and spices.
Poluck, a well-known local jeweller, began working on his own chicken coating mix in his home.
After receiving approval and certification from Algoma Public Health to prepare chicken coating mixes in his home, Poluck began selling packages of his Grampy D's Original Recipe Northern Fried Chicken coating to local grocers in November 2023.
That was followed by Grampy D’s Great Lakes Fish Coating Mix in February 2024.

Grampy D’s chicken and fish coating are also now available across Ontario through the Sobeys grocery store chain.
Poluck is especially pleased about his chicken coating mix being included in meals served by Bucci’s Place.
“This is one of the things that I've wanted to do from the beginning, to get a restaurant in the Sault to cook with it. I'm happy that people like it. I like getting it out there and having more people try it,” Poluck said.
Marco Bernabucci, owner of Bucci’s Place Eatery, is enthused about preparing and serving sit down chicken dinners with Grampy D’s coating.
“We sampled it. It's fantastic,” Bernabucci said.
Bucci’s will be serving chicken coated with Grampy D’s beginning this week during their usual business hours of 3 p.m. to 8 p.m. Thursday, Friday and Saturday at the Legion located at 96 Great Northern Rd.
Apart from serving chicken dinners coated with Grampy D’s, Bucci’s will also sell Grampy D’s chicken coating packages.
Bernabucci said his restaurant will still be using Bucci’s own fish batter but will use Poluck’s fish coating at a smelt fry at the Legion Thursday.
Bernabucci, who has worked in the food industry for over 40 years, operated Bucci’s Place in Echo Bay beginning in 1997.
He closed that long-standing location and rested due to health reasons before reopening Bucci’s at the Legion two months ago.
“We're hoping that we can boost Dave’s product for him and it’ll be good for us too,” Bernabucci said.
