First you cool the candy.
Then you freeze it under a vacuum.
Then you heat it under a vacuum.
What you're left with is still candy, but all the moisture has been vaporized so it's light and crunchy. That's the concept behind 40 Below Freeze Dried Snacks, which opened its first real shop at 789 Queen Street East this year.
While freeze-dried candy is popular, it also works with fruits and vegetables, ice cream, and even dog treats. Those who swear by it, say the process is beneficial because the food retains nearly all of its nutritional value.
